This recipe is created by me with inspiration from many different Shrimp Scampi recipes. White wine is sometimes used for the sauce but wont be used for this recipe.
This particular version is fairly quick with very accessible ingredients. All the preperation for the recipe can be done while other steps are in progress, making the total time of the dish under 20 min.
Ingredients
shrimp(devained)
lemon
1 clove garlic for every 2 shrimp
olive oil
red chili flakes
pasta - preferably thin and noodle
butter
salt & pepper
cayenne powder
parsley
parmesan
Instructions
Bring water to a boil with a generous amount of salt. Add pasta and cook for however long the box instructs to.
While pasta boils, prep other ingredients - mince garlic, chop up the parsely, and season shrimp with salt, pepper, and cayenne.
Saute the shrimp in a pan with some olive oil over medium heat. Cook both sides for around 2 min before removing from pan.
Add some more olive oil to the pan. Add in the minced garlic and however much red pepper flakes. Turn heat to medium low and carefully watch garlic for burning.
Once fragrant, add in majority of the parsely, a couple knobs of butter, a squeeze of lemon, and a ladle full of the pasta water. Let all the garlic oil emulsify with the butter and pasta water until the consistency becomes thicker.
Around this point, the pasta should have finished cooking. Add the pasta alongside the rest of the shrimp. Toss the pasta around in the sauce and season to taste.
Plate and garnish with the rest of the parsley as a well as a generous amount of parmesan.
